The country has four mountain ranges which run parallel to each other. Coffee is grown on the slopes to the east and west down the centre of the island. There are four main markets; these are Cibao; Bani; Ocoa and Barahona.

Bean varieties grown are Novo Mondo, Catuai, Caturra and Bourbon. In the high regions, coffee is full bodied with moderate acidity; whereas the low regions have a coffee which is softer and less acidic.  

Harvest is from September to February.
